Parmigiano Reggiano PDO Venera Vecchia represents a voyage of discovery through the local area and how time brings out the cheese's distinctive flavour and aroma. From the delicate flavour of the wheels aged for 12 months through the perfect harmony of those matured for 24 months that evolves significantly from 36 months onwards, taking on a range of intense, complex, fragrant aromas.

Parmigiano Reggiano aged for 12-19 months has delicate notes of fresh milk, yoghurt and butter, accompanied by vegetable notes of grass and boiled vegetables and a sweet, mildly acidic flavour. The tyrosine crystals start to become visible in the cheese.

20-26 months

Parmigiano Reggiano aged for 20-26 months strikes a pleasing balance between sweet and savoury flavours, with the milk and yoghurt notes accompanied by notes of melted butter and fresh fruits such as banana and pineapple. The cheese has a crumbly, grainy appearance.
